Catfish, Okra n Beer (Thank you ebijack)

I have been craving this meal, except i want blackend seasoning added. Thanks for sharing, looks great.

I love blackened seasoning too. Sometimes I do both fried catfish and blackened at the same time. It so tasty! Thanks Queencity! :grin:

I use a 50/50 mix of Zatarain's lemon pepper fish fri and either Frosted Flakes or Cap'n crunch cereal. They taste the same
Smash up the cereal, ( it does not have to be put in a food processor)
The 1 gallon container from Sam's club is about $6, 2 boxes of Cap'n crunch/1 dbl box of frosted flakes makes a giant batch and is the 50/50 mix I make, stores very well in containers or ziplocks.
Add cayenne pepper to taste, approx: 1Tbl to 4 cups of the mix
I soak the fillets overnight in heavy cream or 1/2 & 1/2 in a zip lock bag.
Whip 3 eggs depending on how much fillets you have. I use 3 eggs for a ¾ full zip lock gallon bag. Mix the hvy cream, fillets,eggs into bowl. coat fish, put coated fillets into ziplock bag and place in fridge for at least 30 minutes as the batter will stick much better(and not end up in the pan/fryer). Fry in clarified cooking oil at 375 degs.
Adjust to how ever you like it. I've tried changing it many many times over 30+ yrs, but everyone wants it left alone!

Man who woulda thunk Frosted Flakes and fish are a winning combination. This forum is always opening my eyes.

Yeah some 30+ yrs ago neighbors decided to do another block party and I was to fry some walleye (again). I did not have any of my usual breading for frying. I had bought the Zatarain's lemon pepper fri prior to try at some point, which is sold to be a wet batter. But I'm not a fan of wet batter. I had frosted flakes on hand and figured the lemon part was good for most folks who use lemon on their fish. The sweetness of the frosted flakes would be good for the multitude of kids and that is how I happened to come up with it. It has been a hit ever since. Those that like fried fish, with this mixture do not require/want tater sauce. Very surprising how many folks who do not like fish, love my fried walleye, they call it the "other white meat". :twitch:
I've used the same batter on veggies, ( great for fried green tomato's). And other fish.
Depending on who I'm frying for, I really kick it up and use a lot more cayenne.
I hope those who decide to try it like it.
 
Mercy, that looks so good! You grew some beautiful okra and cooked it perfectly! And the catfish looks to be fried just right. I had to loosen my belt a notch just looking!
 
Just about perfect right there Jeanie - I love love love catfish and fried okra. I love some form of tater or hush puppies along with that - but I totally get not wanting to fool with it sometimes - there's a lot to be said for keeping it simple, especially while camping.
