Brethren ebijack (Tom) sent his catfish coating recipe to me awhile back and I got the chance to try it out on my last camp out at the lake.
Really loved the stuff.. Thanks so much Tom!!
I caught a few catfish and wanted to cook some up one night. Really didn't feel like hush puppies or tatoes, so I went with okra that I had brought from the garden.
used cornmeal, flour, salt, pepper, garlic and cayenne for okra coating..
made ebijack's fish coating..
smooshed everthing, then blended...
soaked the catfish in 1/2 and 1/2...
started the okra first...
Pretty much a finger food meal... washed down with cold beer.
The fish was great, I loved the coating!
Tossed another log on the fire and enjoyed the evening.
Thanks so much for your recipe ebijack, it's a keeper!!
I didn't post ebijack's recipe, I'll let him do that if he wishes.
Thanks for looking!
