Looks and sounds delicious, the meat looks very lean?
Does it need fat to carry flavour?
I have never cooked venison, I have not been thrilled by what I have eaten either.
But your looks very moreish.
 
:eusa_clap looks great I have had a knife like that for over 20 years but broke off 2" :doh: ,I use a filet knife to do all my trimming now and a 12" butcher knife to deal with breaking down large parts

That looks so good.my grandmother used to do something very similar. She would simmer deer in a pot for hours till if fell apart and would serve over rice. Your post just brought back some very nice memories. Thanks a bunch.

It is very lean but so tasty. I think the "off flavor" a lot of venison gets is from not being handled properly after shooting. I field dress the deer as soon as it's shot, chill the meat at least 3 days.. usually more like a week if the weather is cold enough. Hope you find some that you like Titch. It's pretty good stuff!

THIS! I've seen enough people mishandle their game by improper field dressing and not getting it on ice or refrigerated, then wonder why their meat tastes bad. Also age and diet are a big factor too. An old buck from the swamp will usually be much gamier and tougher than a young one feeding off grains and alfalfa.
