Had the day off today and decided to cook a rack of spares I had in the fridge. Cooked the Smithfield extra tender ribs. Ribs cooked unwrapped at 275 rubbed with SM cherry.
Also did some abt's with cream cheese, seasoned with SM cherry rub.
And made a leftover ox tail sandwich. I am very full.
Thank you! They cooked much faster. I had planned on wrapping and when I went to foil they passed the bend test. I think I prefer the prime reserve Smithfields but I will try the ET's again.
