The wife managed to snag a two pack of some gorgeous spares last week...a pretty lucky score considering all that is going on. Not gonna lie...this wasn't about the ribs so much as it was about trying to feel somewhat normal in the middle of all this insanity. We froze one rack, and the other found its way onto my smoker. It had been a good couple months since I fired her up, and I needed the distraction.
There she goes! The usual oak splits atop a hot-as-hell mesquite coal bed.
Got that almost-invisible smoke going.
Let's get this party started! I prefer the DIY St. Louis cut as you can see. :-D Rack was rubbed with Fiesta brand Pork Rub, pepper, and salt. Trimmings were rubbed with SuckleBuster's Hog Waller.
Fast forward...we are almost done!
Rib tibs/trimmings are shredded up and tender as all get out.
