Brothers and sisters,
It's been a while since I've grilled/smoked because the past few weeks have been pretty hectic. I got my hands on some score 9 wagyu filet :nod: and had to jump back in the game.
This stuff is guarded by butchers like gold and they don't get high scores like this often. At least lately they don't.
Out of the cryo
So tender that the silver skin just peeled off
Cut into 6-8oz steaks
Marbleization was insane
Seasoned with coarse sea salt and black pepper
Had some bacon end pieces chopped into bits leftover from my last cure and decided on creamy and loaded mashed taters :thumb:
Crisped up the bacon and added a load of garlic and onions to saute and get the mash goin'
Filets on the Santa Maria over oak
Done and plated with mashed loaded bacon taters, tater salad, the green stuff
Insanely tender which was similar to cotton candy texture. Truly melted in your mouth
Sliced this last steak up for everyone to grab a piece
