Venison Grillades and Grits

Camp breakfast one morning.

This is one of my favorite things to make for breakfast while camping. It doesn't really take long to make.

I started a skillet of bacon on the tractor rim first..

I brought some small whitetail backstrap ends from rifle season..

Cut into steaks...

Seasoned with salt, pepper and dredged in flour. Browned in the bacon drippin's...

chopped some scallions, onions, garlic and peppers...

into the venison/bacon drippin's...

Let the venison catch some heat/smoke while the grit pot heated..

added some seasoning and flour to the veggie skillet...

chicken stock... and let er simmer.

tossed some seasoned shrimp onto the fire, they didn't take long.

Grits in the pot, bacon in the "gravy"...

cheese in the grits and called er good.

I scooped up some cheesy grits, topped with sauce and grabbed a few venison grillades n shrimp.

dipped a shrimp into the grits...

and a bite of venison next...

I really like this dish, seems to taste better over the fire, but I guess everything does. :grin:
