Assassin 24 in the House!

First cook - a big learning experience and baby steps. I thought about slathering the legs before I rubbed, but passed. I put one tray full of pecan chunks in the fire box for some smoke (didn't want to over smoke) and I'll see what that does to the flavor.

Got a ways to go learning this pit, and I'm going to have fun doing it. :-D

I like to have some moisture on the meat, and not just a dry rub coating...better results IMO.

My thinking was the brine will keep it moist and I'm looking for crispy skin.

I'll find out soon. :-D

You can definitely taste the smoke, but it's not strong. I went light with just that first load of chunks and tried not to over smoke the legs.
