Both of my parents are gone....but my Dad taught me how to fish, and my Mom taught me how to cook. SO...I decided to cook up some catfish and smother it with Mom's crawfish etouffee.
Father's Day dinner was a tribute to both.
These were some of the catfish caught on my last camping trip to the lake.
I made the etouffee first by starting with a blonde butter roux. (used my home smoked, canned butter)
shrimp stock..
made up my blackening seasoning for the fish.. and added some to the pot.

crawfish tails...
Kept the pot on low while I cooked the fish..
Went with the blackening seasoning on some and cornmeal mix on the others..
heating the oil to fry the first batch..
wiped the skillet and added a bit of butter to blacken the rest..
I blackened a few shrimp for snacking...
That's it. Blackened and fried catfish smothered in Mom's crawfish etouffee..
Tried a bite of the fried catfish..
Then the blackened..
One of my favorite meals.. :-D
Thanks to my Dad and Mom for teaching me so much. I miss em both..
