Funny how those fancy 16# primes with even flats dry up or tapper off around KC in the middle of summer, but we are lucky that those contests have a couple handfuls of cooks that have won a GC recently.:twitch:

Having a consistent source of brisket is hard wherever you live, IMHO!

I think we are lucky here in the Midwest to have some great meat at low prices.

"They are claiming that I sell gold Wagyu briskets for 3X more money. That is also not true. SRF sells gold wagyu briskets 14-17 lbs is $199.00 and Huntspoint.com sells our 15 - 17 lbs gold wagyu brisket for $199.95. You get more meat with Johnny Love by 1 lb on the lower end."

It's kind of funny.
BBQ started with the low quality meet (briskets, ribs and chicken) slow smoked and sold to people who could not afford high price meals.

If I have done my math correct, a $200 15 pound brisket is $13 per pound. I can get ribeye stake for less than that and taste lots better.

If I cook two briskets at a event, it's a $400 investment.
I do not know of very many events paying out $400 for a first place brisket.

We have placed 1st place with a plane jane CAB brisket at $3.69 per pound last year. We beat some heavy weight team (I am sure they cooked the high price meat).

That prime ain't no plane jane :-D. Prime around here costs almost as much as wagyu and you have to get it special ordered from anywhere I know because no butcher carries it at least not in brisket form. So to play devil's advocate I'd pose the question that if you get higher quality meat at a discount price does that mean you are slumming it?? And I'm a big proponent of cooking a nice CAB as they did well for us last year.

But that prime would equal many a wagyu with that marbling. You get it less because you are in KC. And I'm jealous :becky:
 
Funny enough, I have been giving Wagyu beef a lot of thought of late. And in particular, the use of Wagyu briskets, and what the real advantages are, versus the perceptions, and whether or not there is a distinct reason for using Wagyu, or the idea of removing variables.

I wish we could buy prime in MA for the prices I see in other parts of the country. Cheapest price I could get last summer was from Sysco and by the case was over $10 per pound. Creekstone is my only reliable option for prime and over 6 contests I just didn't score well with them. Probably me, but when I switched to wagyu I went form mid teens to consistent top tens.

I have come to the opinion that with so many quality teams cooking wagyu that the judges are becoming used to the rich flavor of wagyu and associate that flavor as what they are expecting.

ITs true that anyone on any given day can cook a choice and win, however I think it is more of an outlier than the norm.

A high brisket score wins competitions. Everyone gets a 170 in chicken, but brisket drops off fast... So there is more than $100 on the line, Plus if you just cook 1 right the math works out a little better!

I like SRF Golds, but for another great option, go see Keith from Team Price Chopper at the Price Chopper on 151st and Metcalf. He will get you a high quality sub $100 wagyu. I know a CAB or a prime can win. I've done it myself, but a perfectly cooked wagyu trumps them every time.

I hear you. I don't think the teams that are cooking wagyu are cooking more than 1. And most payouts are slightly more than $100. Maybe like $105 :razz:. Of course there are probably those that have the coin where price doesn't matter.

When we were in KC for the Royal I about lost my mine when we went into costco and saw Prime packers for $3.79/lb and picked up this beauty.


I saved it and cooked it next to a wagyu at the jack and couldn't tell the difference. If I could get Prime for that price I'd cook 2 all day vs 1 wagyu. Around here that prime price is what choice cab is going for. I fully 100% agree you don't need wagyu to win. Just saying prime isn't slumming it :becky:. The prime I got that day I wouldn't even compare to some of the best choice cab i've seen.

Lol. I hear you. That might have been a slight exaggeration, but I will stand by it. I've won chicken a time or two, but brisket is always my money maker! Look at the scores. Brisket pays!

GC is a total of chicken, pork ribs, pork but and brisket.
To win GC you must hit all 4, not just one.
Winning chicken and bombing the other 3 is not good.
Winning brisket and bombing the other 3 is not good.
You have to be hitting on all four.
I have seen a GC that has not finished in the top 10 on the 4 main meats.
No one meat wins it for you.
 
That's an awesome prime. It's tough to find choice off the shelf around here. Primes have to be ordered and the quality is whatever they send you. If I could pick those off of a shelf, it would be nice.
 
All I know is #8 on chicken TOY might know what he's talking about. Lol

I just dont understand why all other sales of beef all over this country and probably the planet are priced per lb except when you buy a brisket from SRF or Huntspoint. Why do i pay for 16lb brisket and get a 14lb brisket? Im sure they pull in enough to afford a scale that doesnt just weigh steaks.
 
I never have used a Strube.

In my four plus years in the hobby it is clear to me that Snake River Farms is the standard bearer in comp wagyu. All of their briskets are very good and prior to them culling the highest grades for the Gold program on occasion you would get these insanely marbled briskets that are hard to describe, true meat porn. I have used a few Gold and a lot of black and the Gold were better but I am not sure the difference is enough to justify my cost, outside of national level contests.

This next part is going to make CBQ very happy. Full disclaimer: I have a very negative opinion of Huntspoint.com. Simply put, my opinion is that this is a predator taking advantage of the competition BBQ community. The following is why I feel this way...

Although the phone and marketing appear as if they are located in the Hunts Point meat market section of NY, at least up until this past fall, the company was/is actually run out of the basement of a home in Nottingham NH. Probably not illegal but definitely misleading.

As was said above the "Gold" grade being sold this past fall were simply Imperial Wagyu briskets sold for more than double the going rate. Communication with Imperial Wagyu themselves will confirm they do not sell anything called a "Gold" grade brisket. Imperial told me this past fall that they have no wholesale customers/distributors in NH. Further investigation revealed that the Huntspoint.com "Gold" grade is based on the "company" in NH eyeing them in a frozen condition and choosing what is "Gold". Don't take my word on this, ask the company themselves.

Truth be told I liked the quality of the actual meat however Imperial (not just from this meat gypsy) have developed a reputation for having gashes in the flats a lot more frequently than other producers.

Here is my experience with Huntspoint.com. I purchased one brisket that had an unacceptable gash and the company agreed to replace it. On my way to a contest in ME, the salesman met me at 11 pm on the side of the hi way in NH to take back my brisket and give me a replacement. I was impressed. The replacement had a small gash but I took 2nd place. Based on the service I ordered another and this was worse with a gash plus some sort of punch holes in the flat. This time the company refused to make good. After being burnt for my purchase I posted the pictures on FB for all to see and the company joined the comments on my FB page and said I was unreasonable. The pictures were posted for all to see and many comp cooks with more experience than I agreed with my assessment of the brisket. Two weeks later the company had my post removed by FB.

I was obviously pissed and called the Town of Nottingham NH seeking info on the "company". The town was not aware of any company named Huntspoint.com however when I mentioned the name of the salesman, the person I was talking with told me to "run the other way".

I was then referred to an office in the NH Health Dept and here is their response to my inquiry seeking information about a company known as Huntspoint.com

Realizing an unlicensed & un-inspected company had been selling briskets across the BBQ community for over a year I reported my experience, made a complaint and moved on with my life chalking the loss up to experience. I did receive an email some time later that a licensing process had been initiated. I really could care less as I have formed my opinion of this company and obviously it isn't good.

I am not posting other info I learned about this "company" as some of it is third hand and can not be defended in a court of law without pulling other people into something they did not sign up for. What I have posted can be easily confirmed.

If they are located in New Hampshire it curious that their physical address is in the Bronx and Office phone number is a 212 (NYC) area code.

There are very different regional prices on briskets. In the northeast, $3.50 a pound is going to get you a CAB brisket at RD, not prime. Since brisket prices are so much higher here (just like gas and everything else), the premium price you pay for a Wagyu is less of a premium than what you would see in, say, Kansas City.

We have gotten top five calls with CAB before, but we mainly cook Wagyu, and in our program we only cook one brisket. We hit the top 25 for brisket in KCBS TOY last year, cooking only 20 contests, so something must be working OK.
