I've been smoking meat for 20 years, but never smoked short ribs until today...these were the pre-sliced type, as oppose to plate ribs. They were so good, I think I like them better than brisket. In every bite, you get that wonderful bark candy and meat that just melts. For sure, there will be more short ribs in my future.
