So I smoked a small (4lb) chuckie yesterday for 5 hours ish. Let it cool down and rest covered, and put it in the fridge last night. I didn’t check IT? So I got home from church and got the smoker warming up to 225. Cubed said chuckie cold from the fridge and into foil pan. My thoughts are rubbed and added a little beer and bbq sauce and covered on the cooker for a few hours, then take the foil off and let it go until probe tender. Does this sound good? Am I on the right track?
