Decided to make a pot of black beans and rice to go with it.
Soaked my beans overnight...
sauteed scallions, onions, peppers and garlic til almost tender...
added smoked jalapeno sausage for flavor...
then the half-tender black beans...
Added chicken stock and spices, then into the drum to simmer and catch some smoke.
made a skillet of jalapeno cornbread while the beans simmered...
added some of the pulled pork to the beans and let er go for another hour or so..
I was busy working so I let the pot simmer til I was ready for it.
Grabbed a plate and topped some rice with the black beans, pulled pork and sausage.
Also cut a slice of jalapeno cornbread..
Nothing fancy, but it tasted good at the time. The smoked pork and jalapeno sausage added a lot of flavor to the black beans. It was kind of a comfort meal for me.
