1st brisket in my DIY offset at 275F following Franklins suggestions on Sunday. It's -10C (14F) but I'll be in a cookshack
 
Hawaiian sliders for a Christmas Pot Luck

Finished more mods on the Bandera. I had done some insulation, replaced the thermometer, and made a smoke chamber baffle 10 years ago. Last two weeks have been fire bricks, elevated fire basket, and door gasket.
Kalua pork has two special ingredients: pink salt that has alaea clay in it and banana leaves. The leaves make a "Hawaiian crutch" for wrapping the pork in halfway through cooking. They've been on 4 hours, time to wrap!
