Cool and damp in Dallas today - so fired up the kettle and smoked a meatloaf, scalloped potatoes and squash casserole

For the meatloaf used a pound each of ground beef, pork and turkey - rather than tomato sauce went with a spicy mustard based bbq sauce, along with some onions, jalapeños, cheese, eggs, milk, crushed club crackers, and some MC holy cow

The kettle was full and did its job!



When the meatloaf hit 155 I added some more mustard bbq sauce to the top of each loaf



When the loafs hit 162 - pulled them and let them rest for 15 minutes - the meal hit the spot
