While browsing BBQ videos on Youtube I ran across Chud's smoked meatloaf as well as Kent Rollins. Both had things I liked so I combined the two and came up with the following:
½ cup beef stock
2 tablespoons Duke’s Sweet Heat Georgia BBQ sauce
1 tablespoon Worcestershire sauce
1 tablespoon smoked paprika
½ tablespoon chipotle powder
2 lbs ground beef 80/20 blend
1 yellow onion chopped
3 serrano peppers stemmed, seeded and diced
1 tablespoon granulated garlic
¼ cup PS Seasoning Bacon Bomb
2 large eggs
1/2 cup heavy cream or milk
1 sleeve Ritz crackers crushed
2 medium carrots
Got everything in the pan for mixing.
Added beef and mixed well. I mixed it enough to get a denser consistency.
Lined a loaf pan with plastic wrap and added the mix. Cover and place in the fridge overnight.
Off the smoker. Looks like I should have packed it in the pan a bit better.
Looks pretty good. I put it in the fridge for use later.
Time to eat. We like to fry up slices in butter to get a good crust.
It was quite good but I will up the seasonings and heat next time.
