This is just notification from InkBird they they are changing the app and they are Chinese and using some kind of translator.

Google has never been allowed in China so this is why you have to sideload Chinese apps. I have to do it with my DJI **** when if I had an Apple fone it would be fine.

Why can't we all get along!

I think the translation program may be leading folks to believe that when they say 'We can control...' that it's referring to Inkbird. I'm pretty sure that it is just marketing speak for 'You can control... '.

That link does not go to the Inkbird Pro, (it's there also for now as you stated) It goes to the Inkbird app

Multiple IB. The way I use my remote temp devices, Bluetooth or Just a DOT, or mainly a Thermapen, which is now dead and buried, replaced by a TPop.
Anyway I've gifted several IB, have one I use and 2-3 NIB. All Bluetooth. To me TEC cooking is stacking and lighting different coals differently. With my pellet cooker, it's different pellet. I've had the pellet cooker nearly two years. No wifi, no Bluetooth and the display probes are still unused in packing plastic.
