Buffalo Grill Fried Chicken Wings

For the Wings throwdown I figured what better than Fried Wings that aren't fried. This is from the Adrenaline BBQ/SnS YouTube series. I've made these before on my Weber Kettle and the crispiness never ceases to amaze me. It's hard to believe these are grilled. Here goes.

Wings, left intact to dry brine with Kosher Salt, uncovered in the fridge for a few hours -



After the skin has dried out, hit 'em with a mixture of flour, baking powder and salt. -



The Weber is up to temp -



Shake off any excess flour mixture and on they go, indirect for 20 minutes -



After 20 minutes, hit 'em with some oil, turn them over and oil that side too -



Let 'em go another 20. Turn and rearrange as needed. After about 60 minutes total they look like this -



I had to plate them prior to tossing them into the Buffalo Sauce -





They look good enough to eat right off the grill, but we're making Buffalo Chicken Wings tonite. Cue the Buffalo Sauce, Ranch Dressing and Celery Sticks -





Dinner is served with some Green Beans and Roasted Potatoes -
