Depends on the Smoker… If you’re using a pellet grill, then stay at the 225* degrees to start for the first couple of hours and then bump the temp up to finish. If you’re using a traditional type smoker or a gravity feed smoker, then give the 275* degree starting temp a try. Always be watchful… .02 FYI.. Meat is done when it’s done. The size of the rack of ribs will also dictate the finish time. Good luck
