Andy, I forgot to say. When I make the dough, I let it rest covered for at least 10 minutes. The cornmeal soaks up the liquid better. It has the consistency of play dough when ready. :-D

Thanks George! I've been making some arepas filled with eggs, scallions and cheese. They are handy for quick breakfasts. I can reheat them in the toaster. :-D
