Where to buy a great comp brisket

Cooking a brisket for my entry at the Houston Rodeo BBQ. Where would you buy a top quality brisket. Should I go for a Waygu?
 
It's up to you if you go Wagyu or not. Snake River Farms has great meat and they are a Brethren Vendor Subscriber!
 
I've heard the cooks go all out there, so I would go with prime or Wagyu, assuming it's heavily marbled.. and you can knock it out of the park. :becky:
 
First, congratulations on just getting to cook in it. It's my understanding that it is heavily corporate and there is a lot of mercenary cooks. I'd do it if a corporation asked me to. It would be an honor.

To your question, I've won big with Creekstone prime and wagyu golds. My best gold was from SRF. I have had damn good Creekstone's too. I'd do both at that comp.
 
SRF is great stuff, as was the Strube Ranch stuff we got from Big Poppas. Hunts Point meats stuff also looks great, although I have not cooked it
 
Snake River farms waygu won at Sams finals last fall...... Just sayin........
To be honest we did sort through a half summers worth of SRF, saving the best for that point in time, but they were all good when we cooked at our best....

Those of you that use SRF do you buy in quantity and freeze the extra briskets for future comps? I ask this because it says that they ship their briskets frozen. I'm thinking about ordering 6 of them for comps this year. Do you think long freeze times (2-4 months) affect the quality?

I freeze 'em. I think anything under 6 months in the freezer won't hurt them, but be wary of leaking cryo bags when you defrost. That seems to have been more of a problem with SRF recently.

Personally, I'm wary of huntspoint.com. The "gold" brisket they sell is not graded by the slaughterhouse. They are Imperial briskets. They eyeball them and designate the nice looking ones as gold and sell for 3x the price. People have done OK with them, but try to represent them as something they aren't.

It seems that they are also more expensive as a rule. I looked into them as an alternative to SRF, but with shipping it turned out to be more expensive. This was back when they first came on the scene, not sure it that info is still relevant or not as it left a sour taste in my mouth and I haven't checked them since.

Yes! And I wait for a sale. I usually buy 3-4 at a time. While it's cold the ground freight option is a great dollar saver.
 
I never have used a Strube.

In my four plus years in the hobby it is clear to me that Snake River Farms is the standard bearer in comp wagyu. All of their briskets are very good and prior to them culling the highest grades for the Gold program on occasion you would get these insanely marbled briskets that are hard to describe, true meat porn. I have used a few Gold and a lot of black and the Gold were better but I am not sure the difference is enough to justify my cost, outside of national level contests.

This next part is going to make CBQ very happy. Full disclaimer: I have a very negative opinion of Huntspoint.com. Simply put, my opinion is that this is a predator taking advantage of the competition BBQ community. The following is why I feel this way...

Although the phone and marketing appear as if they are located in the Hunts Point meat market section of NY, at least up until this past fall, the company was/is actually run out of the basement of a home in Nottingham NH. Probably not illegal but definitely misleading.

As was said above the "Gold" grade being sold this past fall were simply Imperial Wagyu briskets sold for more than double the going rate. Communication with Imperial Wagyu themselves will confirm they do not sell anything called a "Gold" grade brisket. Imperial told me this past fall that they have no wholesale customers/distributors in NH. Further investigation revealed that the Huntspoint.com "Gold" grade is based on the "company" in NH eyeing them in a frozen condition and choosing what is "Gold". Don't take my word on this, ask the company themselves.

Truth be told I liked the quality of the actual meat however Imperial (not just from this meat gypsy) have developed a reputation for having gashes in the flats a lot more frequently than other producers.

Here is my experience with Huntspoint.com. I purchased one brisket that had an unacceptable gash and the company agreed to replace it. On my way to a contest in ME, the salesman met me at 11 pm on the side of the hi way in NH to take back my brisket and give me a replacement. I was impressed. The replacement had a small gash but I took 2nd place. Based on the service I ordered another and this was worse with a gash plus some sort of punch holes in the flat. This time the company refused to make good. After being burnt for my purchase I posted the pictures on FB for all to see and the company joined the comments on my FB page and said I was unreasonable. The pictures were posted for all to see and many comp cooks with more experience than I agreed with my assessment of the brisket. Two weeks later the company had my post removed by FB.

I was obviously pissed and called the Town of Nottingham NH seeking info on the "company". The town was not aware of any company named Huntspoint.com however when I mentioned the name of the salesman, the person I was talking with told me to "run the other way".

I was then referred to an office in the NH Health Dept and here is their response to my inquiry seeking information about a company known as Huntspoint.com

Realizing an unlicensed & un-inspected company had been selling briskets across the BBQ community for over a year I reported my experience, made a complaint and moved on with my life chalking the loss up to experience. I did receive an email some time later that a licensing process had been initiated. I really could care less as I have formed my opinion of this company and obviously it isn't good.

I am not posting other info I learned about this "company" as some of it is third hand and can not be defended in a court of law without pulling other people into something they did not sign up for. What I have posted can be easily confirmed.

Thanks Patrick for telling the story. I have had other people PM me to ask what was up when I referred to huntspoint.com as "some guy in a basement" in another thread, but I didn't think it was my story to tell. Jonny Love pressured Facebook into removing this thread there. I'm assuming Phil isn't going to cave to that kind of nonsense.
 
Well, I must say, I didn't know all this about huntspoint before posting. I was going by some other folks posts (well known friends) and their remarks.

But, very interesting to know, now.

Stripping away everything else from the post, would it be accurate to say that your concerns with Huntspoint.com are that:

  1. The company isn't located in Huntspoint, NY.
  2. They use the term 'gold' to describe one of their briskets categories.
  3. They refused to replace a brisket or refund your money for a brisket that had a gash and holes punched in the flat.
  4. The company isn't licensed.

Is that a reasonable summation?
