Fresh grated Mozz. Slices of Provolone (which is in the mozzarella family of cheeses btw), and FRESH mozzarella either sliced or pulled in chunks and added last. Sometimes smoked gouda is nice, especially on BBQ chicken pizzas like this pan pizza I made.

Mozzarella and American Asiago (creamier) is my goto mix also like to add some Parm and Romano.
 
I start with a base of Mozz. then add different cheeses depending on the other toppings. My go-to--- Bacon, Caramelized onions, and smoked Gouda. (sometimes BBQ chicken too)
