Snow Day Fun with the YS640 - Bacon wrapped pepper and cheese stuffed chicken thighs

It doesn't snow very often here in North Alabama, so when I got the message yesterday (while shopping at Publix) that work was going to be closed, and I picked up some extra goodies to play.

Started with some chicken thighs, roasted peppers and some Monterey jack cheese...



Removed the skins and deboned the chicken thighs.. dusted with Yardbird



and wrapped with two slices of bacon... (The 2-skewer model has a dusting of HDD)



Let it Snow!! and let the Blue Smoke Roll....



Ninety minutes later (letting the bacon finish)...





Dinner is served...
