so I had some leftovers from the lamb leg I did the other day

and since it was a bit chilly today, I figured a shepherd's pie was in order. Started off by sauteing some leeks, carrots and celery in some rendered lamb fat (seasoned with some salt and pepper)
put the boy to work stirring :becky:, and tossed in some shrooms
followed by some cubed leftover lamb, and let that get happy for a few mins, then added in a few cups of french onion soup, and some arrowroot to thicken.
let it come up to a boil, then topped with the leftover mashed celeriac potatoes from the leg cook
parked it in the oven for a bit at around 450° or so until it looked like this
it definitely hit the spot on a cold day
