Scorpion Tails

Nice little snack when the mood hits

First butterfly some 16-20 shrimps.

Next lay down a half a strip of bacon and a piece of jalapeño.

Then add a shrimp and season generously with bbq rub of your choice. I used Old Bay.

Wrap the bacon over the shrimp and secure with a toothpick. Use the other end to secure the tail up like a scorpion

Into the smoker at 375

About half an hour later, bacon is looking good

Slather with Bbq sauce and let it go for a couple more minutes.

I'm usually not much for mixing dairy with seafood, but in this case I think it might just work. I was tempted to add a pineapple tidbit in there too, but I couldn't make it fit so I left it out.


Would be more fitting if this pepper was used.
:shocked: I'm not sure my stomach could handle that kind of heat! The jalapeno in this was very mild and it definitely could have used more of a kick, but I think a scorpion might be a tad bit overkill :wink:
