This was another "building the deck" meal for friends helping me with my back porch deck.
I went the lazy route this time and made the rellenos "skillet style" instead of frying them individually like I usually do...

I used some of the Macho Mayo Spicy Roasted Jalapeno sauce on a hunk of pork.
Here's the last cook with Macho Mayo Roasted Green Chile sauce on a prime rib..

Slathered the meat with the Roasted Jalapeno stuff...
into the drum til done.
The Macho Mayo Jalapeno made a nice bark. Very tasty with a good bit of heat too.
roasted, steamed, seeded and peeled some anaheims (they are my favorite)
mixed up some of the pulled pork, smoked cheese, scallions and a dash or two of Pookie G's Season All...
stuffed the peppers...
made my batter. Whip 8 egg whites, fold in 8 TBS flour then add the 8 beaten yolks.
layered a bit of batter in the skillet, then the stuffed peppers...
covered the chiles with the remaining batter and sprinkled with more Pookie G.
into the drum...
used the toothpick method to test. when the top looks brown and the pick comes out clean, the batter is set.
cut a slice...
topped with a dab of the Jalapeno sauce..
That's it, supper.
I feel kind of guilty for going the easy route but the flavor was still there.
