Sorry for the repeat. I make these often using whatever meat I have on hand. This time I used smoked beef ribs.
Blistered and peeled the poblanos, added cilantro, onions and cheese to the shredded rib meat.
stuffed and floured the chiles...
made my batter...one egg per chile, flour and salt.
I had leftover filling so I fried up a few tortillas...
battered and fried the rellenos..
served with my usual sauce...
I like these. The beef rib meat was nice and tender.
This area is still in a drought and winter has been SO dreary and brown.
