somebody shut me the fark up.
There a Pork Loin TD going on over in the Throwdown Forum.
This is my attempt.
Started with a pork loin with nice fat cover (this cut is also known as a pork ribeye)
Tied it to help shape it and seasoned it well with Garlicky Lemon seasoning salt.
Then into the Shirley patio smoker with hickory.
Pulled it at 140F and let it rest, before breaking out the slicer
Now for the sammich
Wife made up a pineapple slaw and a Dijonaise, I added pickled red onions and served with slabs of sweet taters
