Y’all hear a Ribeye TD is going on!

Started with a little bit of salt on both sides and placed in refrigerator uncovered till the next day

Made my own seasoning mix with 16 mesh pepper, onion power, garlic power, paperika, red pepper and a lil bit of “boil boosters” Herbs. Note this is a salt free seasoning!

Seasoned the sides first and wrapped in Wrights hickory thick cut baccon and tied up. Seasoned the front/back and placed in the fridge for an hour while the smoker got up to temp.

Smoked at 250 with Texas mesquite and some cherry chunks at the end.

Pull at 140 internal and rested for 30mins lightly covered.

Used the coals in the fire box and got the grill nice and hot. Reverse seared for 3mins per side.

Kids ate it all!!!

My local sams always have them. I have found that you need to choose wisely. Some are heavy hard fat and you're buying mostly bone.
