Sorry for the delayed posting. With all the Holiday festivities and me working between Christmas and NYE I’m just now getting around to posting this. I gave my niece the choice of what she wanted for Christmas Eve dinner as she is a new mother. She chose tamales which is a tradition around these parts.
Below is the menu that I put together for the dinner. (Links to recipes included where there is one)
Tamales (I cheated and bought them at Costco)
Verde Sauce

Black Beans
3 15 oz. cans of Black Beans
1 onion – diced
½ poblano chile - diced
½ red bell pepper – diced
1 jalapeno chile - diced

Shredded 4 blend Mexican cheese.

And for dessert we had Churros & Ice Cream with Carmel sauce
The night before I cut up the veggies and made the dressing for the Mexican Slaw and put them in the fridge for the next day.
Christmas Eve morning I made up the guacamole
and put all the veggies in the serving bowl.
I made up a picture of Palomas.
2 ¾ cups Grapefruit juice
2 ¾ cups Blanco Tequila
1 cup lime juice
1 cup Squirt
5 tbsp. Agave Syrup
¼ tsp. salt
Directions: Fill a tall glass half way with ice. Fill with paloma mixture to 2/3 high and then top off with Squirt.
I then made up a batch of Cheesy Coney Bread.
While that was baking, I made up the Savory Black Beans
and steamed the Tamales.
I had already put the Mexican Slaw on the table and now put the dressing on it.
Corn bread is ready.
I cut it and put it on the table.
Here’s the table just before everyone was seated.

Here is everyone seated and waiting to eat.
After giving Grace I plated up a delicious dinner.
As the family was leaving, we heard some chatter in the Cypress tree and went to investigate. We saw this Racoon trying to leave but not wanting to come down with us there. I was able snap this photo of him stepping on the Christmas light controller box for the Cypress tree.
