Breakfast.

Made the tortillas first and let the dough rest...

gathered the ingredients...

tomatoes, tomatillos, garlic, onion, chicken bouillon, peppers, cilantro, eggs, cooked bacon...

blistered the sauce ingredients next...

ran through the blender....

sauteed some onions and peppers first...

added the blender ingredients and some cilantro...

let the sauce simmer over the hot coals for about 25 minutes... salt and pepper to taste.

smooshed the tortillas...

made a slit the tortillas...

added an egg to each tortilla, pressed to seal and layed the tortilla into the sauce.. covered with more hot sauce.
Holding the tortilla open while pouring the egg and taking a photo wasn't the easiest. I made a mess with the first egg and had to try again. :razz:

topped the egg stuffed tortillas with crisp bacon and cheese.

I let the stuffed tortillas simmer over the hot coals for about 4 minutes.

I hate you. I can't get my tortilla's to puff up no matter what i do, let alone be able to slit them open to create a pocket.

Thanks Doug! Good to see you! They were pretty tasty. I forgot to mention, I added some jalapeno to the blender of sauce but not too much. Just a little kick. :grin:

You think the yellow corn works better then white? I can only find white locally. I would have to order yellow from amazon.

It's my favorite for puffy tortillas!
The grocery stores carry it here.
 
Does that actually do anything? Ive never heard of this. I know its a levening agent, but i thought that only applies to gluten fours.

Yes, but I've never had to use it for tortillas. I use the gold Maseca. lol
