My Mother in Law provided an 11.5 lb rib roast for me to prepare for Christmas dinner. After a bit of investigation on various websites, I gave it a go and was pretty impressed with the outcome! I added Herb de Provence and fresh ground pepper to some softened butter and then slathered the roast with it. I then applied a liberal amount of kosher salt. Roasted on my WSM at 250 degrees for 3:15 until the internal tempt hit 120, then I reverse seared it on the Weber Kettle until it reached 130 internal. Very happy and will try it again!
