Favorite Prime Rib Recipe on Offset?

Looking for some good recipe ideas for Christmas. Three-bone choice rib roast on stick burner.

Salt,pepper,a little Montreal steak seasoning,or SPOG,or not.Roast that baby at 250 or less chamber temp til it reaches 120f.Rest 20 minutes,slice and enjoy.It is a Prime Rib,not a steak.A sear is not necessary,in my humble opinion.Serve with au jus and horseradish sauce.Killer meal.Simple is best for my tastes.
