Anyone have any advice tips or tricks for Mystery meat? Trying to get my brain thinking what to do for this Category? Hard to find many pics of the BBQ side out there to get brain cells moving :wink:
 
We didn't have a mystery meat category last year on the inaugural one. For the 3rd category it was chef's choice. I did a seabass, but another team did a cheesecake. If it is a protein i would go with something that is not exotic in nature but could be mainstream. Elk, Bison, etc. I haven't seen the guidelines for this years full series yet.
 
At the only comp I judge that has a mystery meat category, the organizers furnish the meat. There are usually around 30 teams, and less than half will participate. I think my favorite was fish tacos.
 
Not spam :shock:. Thanks for the input. Ya they are calling it a "wild card" for the 3rd dish other 2 are pork ribs and chicken.. Wild card you have to turn in on the silver platter etc..
