Briskets

My point was also real good,but the flat was another story..Flat was tasty, very tender but really dry..Might have been over cooked it?

If it crumbled when you sliced it, it was over cooked. if you are managed to get slices, but it seemed dry, then you under cooked it.

The flat passed the probe and test pull.It slice OK but, there was NO moisture in it.
If I did cook it some more then slicing would have been a problem.
Most all my briskets came out with the same results.:rolleyes:
I've tried foil no foil butcher paper,Hot n Fast, low n slow.
I'll get right IT right one of these days.

PS Just had few cold pieces they, were really great tasting n tender.
