When you find chuck roast in the grocery store, they are cut against the grain, and usually 2-5 lbs.
I love smoking check roasts.
What are your thoughts on cutting a whold chuck roll with the grain, so it could be sliced against the grain after cooking, more like brisket?
Thoughts?
