Catering help Prairie du chien wisconsin

A Co worker of mine is getting married in Prairie du chien wisconsin next year at a remote location on a farm that is set up for weddings. He really wants to have bbq for there meal. He has Googled a lot of different caters and he thinks he is getting smoked food because it says bbq. Alot of what he is finding is oven cooked meat with sauce. I told him I would reach out to my fellow bbq brothers and sisters for help on real bbq.
