That's what was left of a nearly 2lb monster.
Called my cardiologist, he says that if I wake up in the morning I might be fine.
Now for the build!
2.5 lbs of not so very well marbled chuck and 1 lb of the fattiest (err, cheapest) bacon I could find - Ain't no chicken in this baby!
beef cut into strips and the bacon cubed
Single grind thru the 5/16" plate - nice chopped-steak consistency
A few ice cubes in there to keep it cool while I continue prep...
Get the bacon wafers going
That's a 1/4lb patty bottom left, stuffed 1/2lb patty above it and a stuffed 1lb patty on the right - stuffed em' with smoked provolone & pepper jack I did a while back
Lump mesq on the kettle - godda have that mesq lump flavor!
Topped with 2 bacon wafers (yeah, they both fit side by side on that big ol' patty), sliced Avocado Crutch, sweet onion, L & T, MORE pepper jack & prov, and a toasted onion bun slathered with cilantro chipotle mayo - and under that patty was a heap of sauteed bourbon onions & shrooms... did I ferget anything?? Oh, and of course I figured a big burger deserved a big beer - Nankasi Tricerrahops IPA
Had the wifey take a pic of my ridiculousness...
Normally I would have quit there, but I had left over burger and I got hungry again sunday night, and I was in the mood for a burger sooooo...
I made a bit more modest one, and now I can't decide which turned out looking better... I think I'll submit this one for the TD.
For the curious, my best estimate says that I consumed just over a pound of bacon from Friday night thru Sunday night... wow, that sounds really bad.
Now I know what Gore feels like all the time.
