Blue Cheese, Jalapeño and Bacon stuff London Broil

Somehow a London Broil was mixed in with the packs of Flank Steak I had picked up, regardless I was sticking to the plan.

Butterflied the London Broil to thin it out then whacked it pretty good with the tenderizer side of the meat hammer, seasoned the inside with ORBBQ SPOGOS then added the Blue Cheese, Jalapeño and Bacon.

After it was rolled and tied I seasoned the outside with ORBBQ Santa Maria.

Cooked with B&B Hickory Lump and a chunk of Pecan, pulled it when the center hit 132.

Outstanding, Kevin! How did the meat seem compared to the usual flank?
The meat itself was a little dryer than what I would expect Flank Steak to be but with the Blue Cheese, Jalapeño and Bacon it made it a non issue if that makes sense, It was also slightly tougher than I would have expected the Flank Steak to be. Next time I'll probably go 50/50 Cream Cheese and Blue Cheese like I do for ABT's.
