A buddy of mine hosted a Walking Dead finale party on Sunday and I decided to have some fun with it...
Picked up two racks of bison ribs and some various raw sausages to cook on the WSM 22.5.
The ribs cooked at 250 for the three hours over oak natural lump coals and pecan wood chunks. Basted them every so often. (this was my first time cooking Bison ribs and my biggest fear was that they would dry out).
After three hours, wrapped em in a foil pan with some chicken broth and the remaining baste. Added the sausages about 90 mins before taking the ribs off... Wrapped everything up in a bloody shirt and we had a festive belly of zombie grub!
