I just started my 1st official smoke with Betty (18.5 wsm) with my iq110 attached. I have read and read concerning water, no water, and have come to a conclusion. The water acts as a heat sink more than a moisturizer.
Since I have an ATC controlling the temp, I went dry, foiled, no clay or sand in the water bowl.
I waited 45 minutes for the temp to settle before adding the baby backs.
The temperatures after an hour are: grill temp just 275; dome temp 300. Set point 275. damper setting 3

All of that being said, the question that comes to mind is... What time do I put the non-foiled baked potatoes on? :wacko:
