Nothing fancy.. hadn't cooked a tri tip in awhile and my favorite way to cook one is to reverse sear.
Seasoned the tri tip with Big Poppa's Double Secret Steak Rub and some Afrika seasoning...
onto the top shelf of the Hasty Bake with the hot coal rack lowered to the smoke setting. Added a few hunks of hickory...
I let the meat catch some smoke for about 40 minutes...
then moved the tri tip to the lower rack, and raised the hot coals to the sear level....
added a few scallions to sweeten up.
I brought the meat up to an IT of 135F and let it rest while I made a salad.
That's it...
the tri tip, grilled scallions and a salad....
Nothing fancy but it tasted good at the time. :-D
