I usually make these on a hot coal grill but wanted to try out the Blackstone.
We call these flat ones West Texas enchiladas. In other areas, they refer to them as sonoran.

Drizzled with oil, then seasoned some boneless skinless chicken thighs with a spicy blend..then onto the griddle.

sauteed scallions and minced onions in butter... also a sliced jalapeno.

just used the two middle burners for this cook...

scrambled 2 eggs with the scallions and heated a tortilla...

started my build..
sliced, grilled chicken...

topped with the scrambled egg, scallion mix...

added a few of the jalapenos and topped with cheese...

heated another tortilla and repeated with the second layer...

heated the final tortilla and topped with the remaining chicken, jalapenos and cheese...

This was my smallest cook on the Blackstone. I've made shrimp and grits and onion smash burgers so far. I like the way this thing cooks. :)

Ok, licked the screen. :becky: If breakfast looked like that I would eat it every morning instead of just coffee. That's killer Jeanie!

That black stone seems popular. Everyone has great meals on them.
Are they easy to clean and maintain ?

I know Jeanie will also answer but it's about the only easily cleaned rig in my arsenal. Scrape off the food particles, spray some water while it's still hot and run a folded paper towel all across with a scraper or spatula. Once it has cooled down a bit and warm to the touch, coat with a light coat of oil. 5 minutes tops.
 
Cowgirl, how are you able to cook and photograph at the same time?! Food and pics look great. Stop making me want to get a griddle!
 
Excellent! You could cook over a candle and whatever you make would still be over the top.

I'm thinking something like that for dinner tomorrow since yours looks so good.

I haven't had any problem with food sticking. I followed ThatGrimguy's directions for seasoning and it's worked great. I use ssv3's cleaning and storage instructions after each use and it doesn't take any time at all. A lot quicker than cleaning pans in the kitchen. Pretty much wipe it down, make sure it's dry and clean, then I run a paper towel with oil over it before storing. I love this thing so far. :grin:

I'm not a breakfast person, it's usually closer to brunch or noon before I can swallow food. lol

i cant figure out why i enjoy the blackstone threads more than the rest bbq grill etc. these always make me want to get a blackstone. its a strange psychological effect.

They have the same effect on me. I think I've grilled and smoked for so long, it's nice to do something different for a change. :grin:
 
Looks yummy! I don't know if I would call that an enchilada though...maybe a triple decker Mexican breakfast pizza?!? Very nice regardless!!!

They're usually two or three layers tall.

I like em but they are too much for one person (me) to eat in one sitting. :grin:
