I've never even considered chopping and mincing my own burger. I'm going to try it soon. Thanks!

I’ve ground plenty of beef but now I’m curious about a knife chop/mince….bet it makes for some good texture.

I've done it a few times I like it a lot. The patty tastes more full-bodied than airy for lack of a better term. The texture is almost steak-like but breaks down easier like ground beef. No shrinkage, nothing.
 
JUST some cheeseburger, he says....Those look AMAZING. Now I gotta go see if I have a cleaver so I can mince my own.
 
Just noticed that it appears that you have a double layer of onions (?) .... one that is a bit grilled and one that is fresh ... nice taste and texture combo ...
