One of our favorite comfort foods is a smash burger. We've had them at restaurants numerous times but they just never taste as good as homemade.

Just formed 5 ounce balls of 80/20 ground beef with no seasoning. That will come on the castiron grill. I started by frying some onions in bacon fat, then pushed them off to the side and smashed down my beef balls, added S&P and waiting for them to crisp up.

After the burgers were flipped, the onions were added, then topped with double cheese. Assembled with lettuce, tomatoes, mustard and relish and these were hands down one of the better smash burgers I have made.
