Looks fantastic! I'm definitely gonna' try that. Looks like you were camping in western OK. Maybe Foss or Canton? I used to spend some very enjoyable days around those two lakes when I lived on that side of the state.

Jeanie- WOW. My three favorite foods together. I mean, taters and onions are a given. Onions and beef are a given. But wow, The way you matched them up was genius. Never would have thought to stuff an onion. I love, love, love sweet onions! I've stuffed peppers quite often, and really enjoy them, but to stuff an onion, pure genius!
Oh, and I love cooking in dutch ovens when we are camping. And most definitely when in elk camp. Nothing like it.
You are a very talented cook. I have really enjoyed all the food pRon you have posted up. Excellent! :clap2:

Yep, another cowgirl cook that I'll be stealin'. Maybe we should start a thread on "post your cowgirl cover cooks" to see how many people try to recreate your "simple" food. :p
