Onions and beef are a given. But wow, The way you matched them up was genius. Never would have thought to stuff an onion. I love, love, love sweet onions! I've stuffed peppers quite often, and really enjoy them, but to stuff an onion, pure genius!
Oh, and I love cooking in dutch ovens when we are camping. And most definitely when in elk camp. Nothing like it.
