Breakfast on the Fire

Not sure what to call this. An Indian frybread, beef cheek, chipotle hollandaise benedict breakfast seems to be too windy. lol

I started with the fry bread and the hollandaise sauce first.

Let the dough rest while I worked on the sauce, it takes the most attention.

I add butter to the egg yolks, lemon juice and chipotle seasoning. When the sauce is ready, I set it to the side and heat the beef cheeks.

Then fry the bread...
I just hand form the dough.

I keep the bread on the low heat side of the fire to stay warm and take on some smoke...

baste some eggs with butter and breakfast is ready..

I like to butter the fry bread, then top with beef cheeks and an egg..

next the chipotle hollandaise with an extra sprinkle of chipotle seasoning..

a few sprinkles of cholula..

one of my favorite breakfasts!
