I had been wanting to do Cuban sandwiches for quite some time and finally got to it this past weekend. Perfect for the weekly family get together.
In a nutshell, a Cuban sandwich is like a panini sandwich consisting of ham, Cuban lechon asado (roasted pork), cheese, mustard, and slices of pickles in a sandwich/hoagie roll.
I wanted to use ham ham as opposed to deli ham so I made a trip to Albertsons and stumbled upon all time favorite ham, Kruse. They usually bring them in for the holidays only but they had two which where deeply discounted.:shocked: SCORE!! .99lb
Processed the ham and vacuum packed since it's say too much ham
Got the working on the making the lechon asado (the Cuban pork roast) which is to be marinated with garlic, cumin, oregano, salt, pepper, bay leaves, sour orange juice (I squeezed regular oranges and lemons to acheive sourness)
Put slits into the pork butt
Let it sit in the marinade. Smelled absolutely amazing.
Rainly Sunday afternoon and I fired up my new PBC. My friend love my v1 PBC so much he kept it and told me to get me a new one. I did and they now come porcelain enameled like the Webers. :thumb:
Hung the butt
A little hung over from Sat night so nothing to do but cure it.:becky: Made some micheladas. Really refreshing and here are the ingredients if you're interesed. 1/4 to 1/3 cup of clamato, top the rest with beer, dash of tabasco or hot sauce on hand, dash of Worcestershire, squirt of lemon. Salt the rim if you want.
About two hours in I had a 1lb to 1 1/2 pork butt left so I cubed them bitesize for snacking. It takes about 45 to 1hr and they're delicious.

Plan B due to the rain and I couldn't use the griddle
A little butter on the CI and on top of the roll. I used clarified butter
Pressed 'em down gently until you can press anymore and cheese is melted

This one turned out way better than I expected it to be. Absolutely delicious.
