Sorry I post these so often, they are some of my favorites. :redface:

I injected a pork butt with kicked up beef stock, then seasoned with PookieG and Big Poppa rubs...

into the drum til done...

made a sandwich with the meat the first night..

made a filling with pulled pork, onions and cheese..

blistered, peeled and seeded some Anaheim peppers, then stuffed with the pulled pork filling...

dusted with flour before battering to fry...

made my batter, whipped 8 egg whites, folded in 8 TBs of flour, then added the beaten egg yolks...

I made 8 rellenos, ate most of one and wrapped the rest of them for future quick meals for me. These things are addicting. :grin:

You have got that "Down Pat" ! Prettiest Chilli Rellenos I ever saw. :clap: Did you flip them or spoon hot grease over top til it set,then flip? They are gorgeous.

Hoss thank you! I dipped the first one and made a mess so I switched to spooning hot oil over them before turning. Worked out a lot better. :mrgreen:
