I added one ingredient that may upset some purists.

Onto the WSM




In the mean time, firing up the Akorn. Let them steam a little in the husk





Removed husk and basted with melted butter + S&P mix





This is traditional






Not sure if this is: shredded smoked chicken + 12 hour smoked shoulder + spice mix above




Added curry powder to this traditional spice blend




30 of them wrapped and into the pot








Not sure if authentic, just kind of eye balled it




Made a sweeter version with mangos for the kiddies (and me :roll:)



Charred corn guacamole




Cold Jicama and Fuji apple salad with salt and pepper

Whoa! That all looks amazing (and the pictures sure impressive quality, too)!

I can nearly taste it from here.
 
Thanks guys. I love tamales and lately have been trying to experiment a little with flavors in my cooks. I love cumin and thought the curry powder in the masa would really go well with it.

Looks great. I've been doing curry in my BBQ too for a bit now and love it.

Wow, thank you! That's may be the biggest compliment I've had on the forums, but cowgirl is cowgirl. She's in a different league, I'm probably not even playing the same game :laugh:

Looks awesome! How did the curry work out?!?

I really really liked it! Masa is so savory an salty as is, then gets mixed with a bit of the same flavors when you get to the nice juicy meat. Heck, I even use the pan drippings and broth to mix the masa, so it really shares similar flavors. The curry was a really nice flavor on top of all that and was a really big hit. It also just went so well with all the other stuff.

I think if I do a tamale bar I might do one of the following:

- 30/70 curry/regular tamales
- make a second guacamole with curry powder
- make a yellow curry sauce that can be poured over the tamale (that might get me shot)

Btw, this was even better with crushed honey roasted peanuts sprinkled on top.
